Chimichurri Chicken Skewers

Chimichurri chicken skewers are a delicious fusion of flavors that have their roots in Mexican cuisine. Chimichurri itself is a vibrant, herbaceous sauce traditionally made with parsley, garlic, vinegar, olive oil, and spices. It is commonly served with grilled meats in Mexico, making it a staple in barbecues.
I recently had the pleasure of enjoying chimichurri chicken skewers at my friend’s house, and they were absolutely delightful! The chicken was marinated in a vibrant chimichurri sauce, infused with fresh herbs, garlic, and a hint of acidity. Grilled to perfection, each skewer had a beautifully charred exterior while remaining juicy and tender inside. The bold flavors of the chimichurri really shone through, adding a refreshing kick to the savory chicken.
Served alongside grilled vegetables and a sprinkle of fresh parsley, the dish was not only delicious but also visually stunning. It was the perfect centerpiece for our gathering, and I couldn’t get enough of those skewers. They captured the essence of summer and made for a memorable culinary experience!

Chimichurri Chicken Skewers
Ingredients
- 1 kg Boneless Chicken cut into small cubes
- ½ Tsp Meat tenderizer
- Cheery tomatoes as needed
- Wooden bamboo sticks as needed
Chimichurri sauce
- ½ cup Fresh Parsley
- 3 cloves Garlic
- ¼ cup onion chopped
- 1 tsp Dried Oregano
- 2 small Fresh red chilli (or you can use chilli flakes)
- 2 tbsp vinegar
- 1 tsp Salt or to taste
- ½ tsp Black Pepper
- ½ Lemon juice
- ½ cup Extra virgin-olive oil
Instructions
Prepare the Sauce
- Mix everything and blend coarsely(make sure don't blend it in to paste)
- Remove ½ to ⅔ cup sauce from it and set aside for serving with chicken and use the rest for chicken marination.
Marinate the chicken
- Take 1 kg boneless chicken and cut in to small cubes. Add chicken cubes in chimichurri sauce, add ½ tsp meat tenderizer, it will make chicken more tender.
- Mix well and let it marinate for 30 minutes.
Assemble the Skewers
- Insert chicken on skewers with cherry tomatoes in between and arrange on the top of baking tray in a way that sticks don't touch the base of baking dish (line the baking dish with foil to collect all the juices from the chicken during grilling).
Grill the Skewers
- Grill the chicken in 190 degree preheat oven for about 15 minutes or until done, flipping once in between. During last 2 minutes of grilling you can increase the oven temperature to 220 degree for grilled/ charred look on the chicken.
- Don't overdo cook/grill the chicken or else it will get dry.
Serve
- Remove the skewers from the grill and serve hot, drizzled with the chimichurri sauce. You can also serve extra chimichurri on the side for dipping.
