Egg burritos are a hearty and delicious way to kickstart your day! Ingredients
  

  • 3 Eggs
  • ¼ tsp Salt or to taste
  • ¼ tsp Black Pepper
  • 2 tbsp Milk
  • 2 tbsp Oil
  • 1 cup Capsicum Julienne cut
  • 2 Medium size Tomatoes cut into pieces
  • 1 small ripe Avocado stoned, peeled
  • ¼ Red Jalapenos pickled
  • ½ tsp Black Pepper
  • 1 cup Cheese crushed

Ingredients for Sour cream

  • ¾ cup cream
  • 1 tbsp Lemon juice
  • ½ tsp Paprika powder
  • ½ tsp Black Pepper
  • ¼ tsp Salt
  • 1 tbsp Fresh coriander finally chopped
  • 1 tbsp Soya(Dill)
  • 4 tbsp Milk

Instructions
 

Method for Scrambled Eggs

  • Whisk the eggs in a bowl, add salt black pepper crushed, milk & whisk well.
    Heat fry pan, add cooking oil, and  egg mixture Let it sit for a few seconds, then gently stir with a spatula, pushing the eggs from the edges toward the center. Continue this process, allowing the uncooked eggs to flow to the edges.
    Cook until the eggs are softly set then remove from heat.

Method for veggies

  • Heat fry pan add cooking oil, capsicum, tomatoes, avocados, pickled red jalapeno, salt, black pepper powder.
    Stir well all the veggies for 1-2 minutes and set aside.

Method for Sour Cream Sauce

  • Add cream and lemon juice in a bowl, mix well and Sour cream is ready.
    In prepare Sour cream add paprika powder, black pepper powder, salt, fresh coriander, dill, milk & mix well, cover & let it rest untill for 10 minutes & set aside.

Assembling

  • Place a tortilla on a working surface (you can buy readymade tortilla or can use homemade also).
    Add prepare Sour cream, scrambled egg, veggies, iceberg again some sauce, fold all the sides & roll the tortilla.
    Grease frying pan with some butter & fry burritos from all sides until golden brown.

Serve

  • Wrap burritos in butter paper & serve.
