Chicken Crepes Delight
Ingredients
For Creamy Chicken Filling:
- 3 tbsp Cooking oil
- 1 tbsp Garlic chopped
- 400gr Boneless chicken small cubes
- 2 tbsp Soya sauce
- 1 Lemon juice
- 1 tsp Red chilli powder or to taste
- 1 tsp Salt
- ½ tsp Black pepper crushed
- 1 tsp Dried oregano
- 1 medium Onion cubed
- 1 medium Capsicum cubed
- ½ cup Chicken stock or dissolve 1 stock cube in ½ cup hot water
- ¾ cup Cream room temperature
- ½ cup Cheddar cheese grated
- 1-2 tbsp Fresh coriander chopped
For Crepes:
- 2 large Eggs
- ½ cup Milk
- ½ cup Water
- ¼ tsp Salt
- 1 cup Flour
- 2 tbsp Butter melted
For Assembling:
- Mozzarella cheese (grated) – as needed
- Crushed red chilli to taste
- Fresh coriander (chopped) – for garnish
- Cooking oil for greasing
- Chilli garlic sauce for serving
Instructions
Prepare the Creamy Chicken Filling:
- Heat oil in a wok or pan. Add chopped garlic and sauté until fragrant.
- Add chicken cubes and cook until they turn white.
- Stir in soy sauce, lemon juice, red chilli powder, salt, black pepper, and oregano. Cook on medium heat for 2–3 minutes.
- Add onion and capsicum. Mix well.
- Pour in chicken stock and cream. Stir and let simmer for 2–3 minutes.
- Add cheddar cheese and chopped coriander. Mix until the cheese is melted and the sauce is creamy. Set aside.
Make the Crepes:
- In a mixing bowl, whisk together eggs, milk, water, and salt.
- Gradually add flour, whisking until smooth.
- Stir in melted butter. Let the batter rest for 15 minutes.
- Lightly grease a non-stick pan (about 9”) and heat over medium-low.
- Pour in ½ cup batter, tilt the pan to spread evenly.
- Cook until the bottom is light golden (about 1–2 minutes), then flip and cook the other side.
- Remove and repeat with remaining batter (makes 9–10 crepes).
Assemble and Finish:
- Place a crepe on a flat surface. Sprinkle a little mozzarella cheese, then spoon some creamy chicken filling in the center.
- Fold all sides to make a square or envelope shape.
- Heat a lightly oiled griddle or pan. Place the stuffed crepes seam-side down.
- Sprinkle with oregano and crushed red chilli. Cover and heat for 1–2 minutes until cheese melts and the crepe is lightly crisped.
- Garnish with fresh coriander. Serve hot with chilli garlic sauce or your favorite dip.
