Ingredients

For the Chicken

2 kg Chicken
Prep: Cut into Pieces
2 cup Cooking Oil
1 cup Water
3 stick Green Chilli
Prep: Cut into half
1 tsp Ginger Paste
1 tsp Garlic Paste

Spice Mixture

3 tbsp Coriander Powder
1 tbsp Cumin Seeds
Prep: Crushed and Roasted
1 tbsp Red chilli powder
2 tsp Chat Masala
2 tsp Chilli Flakes
1 tsp Black Pepper
1 tsp Black salt
1 tsp White salt
1 tbsp Fenugreek
3 tbsp Lemon Juice

Instructions

Cook the chicken:

Heat the oil and 1 cup of water to a large, heavy-bottomed pot. Add the chicken and cook over medium-low heat until the chicken is about halfway done.

Add the aromatics

Add the halved green chilies, ginger paste, and garlic paste. Mix well and continue cooking until the chicken is completely cooked and the water has evaporated. The chicken should be tender.

Prepare the spice mixture:

In a bowl, combine the crushed coriander, roasted crushed cumin, red chili powder, chaat masala, chilli flakes, black pepper, black salt, white salt, and dried fenugreek. Mix thoroughly.

Coat the chicken:

Transfer the cooked chicken to a large serving or mixing pot. Sprinkle the prepared spice mixture over the chicken and gently toss until every piece is evenly coated. Add the fresh lemon juice and mix again, making sure the spices and lemon juice are well distributed throughout the chicken.

Rest and serve

Let the chicken rest for a few minutes before serving, allowing the spices and lemon juice to soak into the chicken.
