Bombay Toast (Bombay Sandwich) Recipe

Bombay toast, also known as Bombay Sandwich, is a popular street food from Mumbai (Bombay) that combines the goodness of spiced potatoes, crunchy vegetables, and fresh chutneys sandwiched between buttered bread, then grilled to perfection. Ingredients
  

  • 2 tbsp Cooking Oil
  • 500 gr Boiled Potatoes Mashed
  • ½ tbsp Cumin seeds (Zeera)
  • 1 tsp Mustard seeds (Rai)
  • 2 tsp Red chilli powder or to taste
  • 1 tsp Tikka Masala
  • 1 tsp Salt or to taste
  • ¼ tsp Turmeric powder
  • ½ tbsp Chopped Green chili
  • 1-2 tbsp Chopped Fresh Coriander
  • 1 tsp Lemon juice

For the Green Chutney:

  • 5-6 Fresh Spinach leaves
  • 1 handful Fresh Coriander
  • 1 handful Mint leaves
  • 2 cloves Garlic cloves
  • 3 Green chilies
  • ¼ cup Roasted gram
  • ½ tsp Salt or to taste
  • 3 tbsp Lemon juice
  • ¼ cup Water

For Assembling the Sandwich:

  • 4 large Bread slices
  • Butter (Makhan) as needed
  • Cucumber slices (Kheera) as needed
  • Tomato slices (Tamatar) as needed
  • Onion slices (Pyaz) as needed
  • 1 tsp Chaat masala
  • 4 slices Cheddar cheese
  • Nimco sev for Garnishing

Instructions
 

Prepare the Green Chutney

  • In a blender, add the spinach leaves, fresh coriander, mint leaves, garlic, green chilies, roasted gram, Himalayan pink salt, lemon juice, and water.
    Blend everything into a smooth chutney. Adjust the water to get the desired consistency. Set it aside.

Prepare the Potato Mixture

  • Heat 2 tbsp of cooking oil in a frying pan over medium heat.
    Add cumin seeds and mustard seeds, stirring them until they splutter.
    Add red chili powder, tikka masala, pink salt, and turmeric powder. Stir to combine the spices and toast them for a few seconds.
    Add the boiled, grated potatoes to the pan and mix well with the spices. Cook for about 1-2 minutes, allowing the flavors to meld together.
    Stir in the chopped green chili, fresh coriander, and lemon juice. Mix everything well. Set aside to cool slightly.

Assemble the Bombay Toast

  • Take two slices of bread and spread butter generously on one side of each slice.
    On one slice of bread (buttered side), spread a layer of the freshly prepared green chutney.
    Layer cucumber slices over the chutney.
    Spread a generous amount of the prepared potato mixture on top of the cucumber slices.
    Add a layer of tomato slices and onion slices.
    Sprinkle a pinch of chaat masala for added flavor.
    Place a slice of cheddar cheese on top of the vegetables.
    Top with the second slice of bread, buttered side facing outward.

Grill the Sandwich

  • Heat a nonstick grill pan or skillet over medium heat.
    Grease it with a little butter.
    Place the assembled sandwich on the pan and grill until golden brown and crispy on both sides, about 3-4 minutes per side.
    Once done, remove from the pan and cut the sandwich into four pieces.

Serve

  • Spread a little more green chutney on the cut pieces of the sandwich.
    Garnish with nimco sev for a crunchy finish.
    Serve hot and enjoy your homemade Bombay toast!
