For the Chicken Marinade:
- 500 g Chicken breast or thighs sliced into strips
- 1½ tsp Paprika
- 1 tsp Ground cumin
- 1 tbsp Lemon juice
- 1 tsp Black pepper
- 1 tsp Salt or to taste
- 3 tbsp Cooking Oil
For the Vegetables:
- ½ Green pepper julienned
- ½ Red pepper julienned
- ½ Yellow pepper julienned
- 1 Onion sliced
- 1 tsp Paprika
- ½ tsp Ground cumin
- ½ tsp Salt or to taste
- 3 tbsp Cooking Oil
Marinate the Chicken
In a bowl, combine the chicken strips with paprika, cumin, lemon juice, black pepper, salt, and 1 tbsp of oil. Mix well, ensuring the chicken is evenly coated with the spices. Let it marinate for at least 30 minutes for maximum flavor.
Prepare the Vegetables
In a separate bowl, mix the julienned green, red, and yellow peppers with sliced onions, paprika, cumin, salt, and 1 tbsp of oil. Toss the vegetables until they are well coated in the spices.
Cook the Chicken
Heat 1 tbsp of oil in a large pan over medium-high heat. Add the marinated chicken strips and sauté for about 7-10 minutes, or until the chicken is cooked through and tender. Stir occasionally to ensure even cooking. Once done, remove from the pan and set aside.
Cook the Vegetables
In the same pan, add another 1 tbsp of oil and sauté the seasoned vegetables for 5-7 minutes, or until they become tender but still crisp. Stir often to avoid burning.
Serve on a Sizzling Tray (optional)
For an authentic fajita experience, heat a sizzling tray and add the cooked chicken and vegetables. You can also serve them directly from the pan if you don’t have a sizzling tray.
Tips:
You can substitute chicken with beef or shrimp if you prefer.
For extra heat, add a chopped jalapeño to the vegetables.
Make it a complete meal with a side of rice, beans, or a fresh salad.
