Creamy White Sauce Pasta

Ingredients
  

For the Seasoning:

  • ½ tsp Onion powder
  • ½ tsp Red chili powder or to taste
  • ½ tsp Salt or to taste
  • ½ tsp Dried oregano
  • ½ tsp Black pepper powder
  • ½ tsp Garlic powder

For the Chicken:

  • 350 gr Chicken fillets
  • 2-3 tbsp Cooking oil

For the White Sauce:

  • 2 tbsp Olive oil
  • 1 medium Mushroom sliced
  • 2-3 tbsp Butter
  • 1 tbsp Garlic chopped
  • 2 tbsp All-purpose flour
  • cups Full Cream Milk
  • 1 tsp Chilli flakes
  • ½ tsp Black Pepper powder
  • ¼ tsp Dried Oregano
  • 1 tsp Dried Parsley
  • ½ tsp Salt or to taste
  • 1 cube Chicken stock
  • ½ cup Cheddar cheese Grated
  • ½ cup Cream

For the Pasta:

  • 300 gr Pasta (boiled with salt as per package instructions) penne or spaghetti as u like
  • Fresh parsley, (for garnish)

Instructions
 

Prepare the Seasoning:

  • In a small bowl, combine the onion powder, red chili powder, salt, dried oregano, black pepper powder, and garlic powder.
    Mix well and set aside.

Prepare the Chicken:

  • Use a kitchen hammer to pound the chicken fillets from both sides to tenderize them.
    Sprinkle the prepared seasoning on both sides of the fillets, ensuring they are well coated.
    Heat cooking oil in a cast-iron pan over medium flame and grill the chicken fillets for about 5-6 minutes on each side until cooked through and golden brown.
    Remove the chicken from the pan, slice it into pieces, and set aside.

Prepare the White Sauce:

  • In a wok, heat olive oil over medium heat and sauté the sliced mushrooms for a minute until they soften. Remove them from the wok and set aside.
    In the same wok, add butter and let it melt. Then, add the chopped garlic and sauté for another minute until fragrant.
    Add the all-purpose flour and cook for about a minute, stirring constantly.
    Gradually whisk in the milk, making sure there are no lumps.
    Add the crushed red chili, black pepper powder, dried oregano, dried parsley, salt, and chicken stock cube. Whisk well and cook until the sauce thickens, about 2-3 minutes.
    Reduce the heat to low and add the grated cheddar cheese and cream. Stir until the cheese has melted and the sauce is smooth.

Combine the Pasta and Sauce:

  • Add the sautéed mushrooms, cooked penne pasta, and stir well to coat the pasta in the creamy sauce.

Serve the Dish:

  • In a serving dish, add the creamy white sauce pasta, then top it with the grilled chicken pieces.
    Garnish with freshly chopped parsley and serve hot.

Notes

Tips:

  • Feel free to adjust the level of spiciness by adding more or less red chili powder to suit your taste.
 
  • You can add other vegetables like bell peppers or spinach for extra flavor and nutrition.
