Use a kitchen hammer to pound the chicken fillets from both sides to tenderize them.Sprinkle the prepared seasoning on both sides of the fillets, ensuring they are well coated.Heat cooking oil in a cast-iron pan over medium flame and grill the chicken fillets for about 5-6 minutes on each side until cooked through and golden brown.Remove the chicken from the pan, slice it into pieces, and set aside.
Prepare the White Sauce:
In a wok, heat olive oil over medium heat and sauté the sliced mushrooms for a minute until they soften. Remove them from the wok and set aside.In the same wok, add butter and let it melt. Then, add the chopped garlic and sauté for another minute until fragrant.Add the all-purpose flour and cook for about a minute, stirring constantly.Gradually whisk in the milk, making sure there are no lumps.Add the crushed red chili, black pepper powder, dried oregano, dried parsley, salt, and chicken stock cube. Whisk well and cook until the sauce thickens, about 2-3 minutes.Reduce the heat to low and add the grated cheddar cheese and cream. Stir until the cheese has melted and the sauce is smooth.
Combine the Pasta and Sauce:
Add the sautéed mushrooms, cooked penne pasta, and stir well to coat the pasta in the creamy sauce.
