Zarda(Sweet Rice)

Zarda rice is a delightful and aromatic Indian dessert made with basmati rice, sweetened and flavored with spices, often served during festivals and special occasions. Its vibrant color and rich taste make it a favorite among many.

Ingredients
  

  • 2 cup Basmati Rice
  • 5 cup Water
  • cup Sugar
  • ½ cup Ghee
  • A pinch of Saffron (optional)
  • 4-5 Cardamom
  • 1 stick Cinnamon
  • ¼ cup Raisins
  • ¼ cup Almonds, cashews
  • Yellow food colour few drops
  • ½ cup khoya

Instructions
 

  • Rinse the basmati rice in cold water until the water runs clear. Soak it for about 30 minutes, then drain.
  • In a large pot, bring 4 cups of water and yellow food colour to a boil. Add the soaked rice and cook until it’s about 90% done. Drain and set aside.
  • In a heavy-bottomed pan, Saute cardamom and cinnamon stick in ghee. Add sugar and half a cup of water, then add the drained rice and sauté gently for a few minutes.
  • Cover the pan with a lid and cook on low heat for about 15-20 minutes, until the rice is fully cooked and flavors meld.
  • Another pan stir fry all the dry fruit in Ghee.
  • Once cooked, fluff the Zarda gently with a fork. Add dry fruits, khoya and Gulab jamun (optional) for an added flavor.
  • Serve warm as a dessert or a festive dish.
